Tartaric acid (dihydroxy - succinic acid, 2,3 - digidroksibutandiovy acid) HOOC - CH(OH) - CH(OH) - COOH — bibasic oxyacid.
Tartaric acid — widespread natural connection. In significant amount it contains in verjuice of many fruit, for example, in grape juice. Salts of tartaric acid — tartrates. D - tartaric acid is received effect of mineral acids on its acid K - salt (wine stone) which is formed at fermentation of grape juice. At pyrolysis D - tartaric acid is decarboxylized with formation of pyroracemic CH3COCOOH and methyl - succinic (methyl - succinic) HOOCCH(CH3)CH2COOH of acids. It is recovered to succinic acid, recovers AgNO3 ammonia solution to Ag; in the alkaline environment dissolves Cu (IT) 2 with formation of transparent bright blue solution - reactant of Felinga.
It is applied in the food industry (food supplement of E334), in medicine, in analytical chemistry to detection of aldehydes, sugars, etc. Salts of tartaric acid (tartrates) are used in medicine, when dyeing fabrics, etc.
